After mixing the dough it had to sit in the fridge for a couple days to harden. Then we took turn rolling the dough and cutting out the circle "moons". I'm more of a drop-cookie kind of gal, so I actually had to go out and buy my very first rolling pin just so we could make these cookies! After baking, they had to cool completely before they could be iced (which in our house means they sat in a tupperware for three days before I got around to making the icing). Amazingly, they were still moist and chewy when I opened the tupperware today.
The icing is made from powdered sugar, milk, a little corn syrup, and almond extract. You could actually use any flavor extract, but I thought almond would work best with the ginger-snappish flavor of the cookies. The icing dries hard and shiny and beautiful. We colored ours yellow, and then the kids decorated with sprinkles. The hardest part is waiting until the icing dries so they can eat them!
