Why Don't I Do This More Often?

After another sleepless (for no apparent reason) night, I got up motivated to get some meals cooked and in the freezer. But thanks to Libby's breakfast of cereal and milk, I had to give her a bath first. Then I got started!

2 hours later I have three meals cooling and a fourth will be done cooking in an hour. Then I will get started on the next round, which will only be 2 meals, and preparing the meat for tonight's dinner: schnitzel! My SIL Joyce made schnitzel last week for her hubby's birthday and I have been craving it ever since. So tonight's the night! I've never cooked schnitzel twice in one year before! I am so excited!

Anyway, as I was cooking this morning I thought "why don't I do this more often?" Most of what I'm doing for my freezer meals is just meat: taco meat, chicken, roasts, BBQ, etc. It doesn't require a lot of effort, and one day of cooking can save hours and hours and hours down the road. The only other time I have done freezer cooking was when I was pregnant with Libby. And it was great to look in the freezer each morning, pull out a bag of already cooked meat, and when evening rolled around just heat it up and cook some veggies. But it never has occured to me to do it again until now. Maybe it's because I don't have an extra freezer. If I had one, I would be more motivated to fill it with meals. Or maybe not. Maybe I would just fill it with ice cream and popsicles. That's more likely.

So the meals getting done today:
Ground beef for tacos
Chicken tacos (crock pot meal and so easy!)
Ratatouille
Chicken for enchiladas (corn tortillas don't freeze well, so I just cook and shred the chicken and assemble the rest the day I want to eat it)
Stir-fry
Pot roast (no veggies)

Tomorrow:
Coke Pork (for BBQ)
Herb Roast Chicken
Salsa soup
maybe something else, I haven't decided yet.

Last night we bought the little Zip-loc hand vac for freezer storage. It has special freezer bags and you suck all the air out to prevent freezer burn. The vac itself cost $7, the bags are like $2.50 a box (9 gallon size, 12 quart, I think). A lot cheaper than the big food saver vac. I'm hoping it will do it's job.

Labor update:
Not much to tell. I had a few contractions overnight, but none that would have woken me up if I had actually been sleeping. Today they are stronger than yesterday, but still far apart. I think I'm in for a few more days of this before anything actually happens. Pros: I get my freezer stocked; the longer the baby stays in the better. Cons: I'm freakin' miserable!

Hey Kristen,

I have done freezer meals a lot. We never really liked the ones we had to cook ahead of time, because we always felt like we had to recook them again... anyway a lot of work. Menu Mailer has some awesome easy freezer meals where you do not have to cook things ahead of time, and you just stick it all in a freezer bag. Some of them all you do to cook is dump them in the croc pot. It is really quick and painless, and feels so good to have all those meals in the freezer.
